How to Make Pistachio Ice Cream

 

Deliciously Nutty and Creamy Homemade Dessert!



If you're a fan of rich, nutty flavors and dreamy frozen treats, pistachio ice cream is the perfect dessert for you. This delightful, pale green ice cream combines the natural sweetness of pistachios with creamy goodness—perfect for hot days or anytime indulgence. And the best part? You can make it right at home with a few simple ingredients!



🌰 Ingredients:


1 cup unsalted pistachios (shelled)


2 cups whole milk


1 cup heavy cream


3/4 cup granulated sugar


4 large egg yolks


1/2 tsp almond extract (optional, for enhanced nutty flavor)


A few drops of green food coloring (optional, for that classic pistachio hue)


Pinch of salt



🧊 Instructions:


1. Toast the Pistachios


Lightly toast the pistachios in a pan over medium heat for about 5 minutes to enhance their flavor. Let them cool, then finely grind 3/4 cup of them using a food processor.


2. Make the Pistachio Milk Base


In a saucepan, combine the ground pistachios, milk, and half the sugar. Heat on medium until it begins to steam, but don’t let it boil. Remove from heat and let it steep for 30 minutes to absorb the pistachio flavor.


3. Prepare the Custard


In a bowl, whisk the egg yolks with the remaining sugar until pale and smooth. Slowly pour in the warm pistachio milk, whisking constantly to avoid scrambling the eggs.


Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens slightly and coats the back of a spoon (about 170–175°F or 77–80°C). Do not boil.


4. Add Cream and Chill


Remove from heat and strain the mixture to remove pistachio bits. Stir in the heavy cream, a pinch of salt, almond extract, and food coloring if using. Let the mixture cool completely, then chill in the refrigerator for at least 4 hours (or overnight).


5. Churn the Ice Cream


Pour the chilled mixture into your ice cream maker and churn according to manufacturer’s instructions (usually 20–30 minutes) until it reaches a soft-serve consistency.


6. Freeze Until Firm


Transfer the churned ice cream into a lidded container and freeze for at least 4 hours until firm.


7. Serve and Enjoy!

💡 Tips:


Want it extra creamy? Substitute some milk with more heavy cream.
